I don't belive there is a single person in the world who doesn't know Bounty bars. Few years back that was my favourite snack, this and another few:)
But as I'm gluten and dairy intolerant, there is not much treats I can buy in regular shops anymore.
So when I'm craving chocolate and coconut, I'm making my own, E-free, gluten-free, dairy-free option. They are totally rich and coconut-y. It might sounds like a lot of work for some of you, but belive me it's literally 20 mins work and 45-60 mins cooling in a freezer. After all that HARD work you get full batch of delicious and healthy chocolate bounty bars which you can sneak out from your fridge whenever you like. Even though they are high in energy you still get value for your calories, because coconut fat is very filling. As well coconut stimulates the appetite and regulating blood sugar.
It's really great combination and I highly recommend to try it!

INGREDIENTS:
Coconut filling:
2 cups dessicated coconut
1/4 cup coconut oil melted (good quality, virgin oil)
2 Tbsp maple syrup
2 Tbsp honey
1 vanilla bean, seeds scraped
1 Tbsp. water
pinch of sea salt
Raw chocolate:
1/4 cup melted coconut oil
1/3 cup raw cocoa powder
1/4 cup honey


 DIRECTIONS:
1. Melt coconut oil over boiling water, add maple syrup, vanilla seeds, salt, whisk to combine, set aside
2. When oil mixture cooled down, pour it over desiccated coconut and combine well
3. Line baking pan (18cm x 18cm) with plastic wrap, press the coconut mixture firmly into place, especially around the edges
4. Wrap it around with plastic wrap and place in the freezer for at least 30 mins
5. In the meantime you can prepare chocolate, melt coconut oil over boiling water and add honey
6. Remove from heat when melted and add cocoa
7. Remove coconut from the freezer, unwrap and cut into 12 bars of equal size
8.  One by one, place a coconut bar into the liquid chocolate and place on the cooling wrack
9. Once all the bars have been done and not dripping, place the wrack in the freezer for the chocolate to harden, about 15 minutes
